The meat is tender and flavorful. I got the medium sauce and it was delicious. Just the right amount of heat and a touch of sweetness. I thought the mayo and cabbage would be a little strange but they added great texture and crunch to the sandwich. The flavor profile reminded me of a McRib but 100x better.

Overall I would say this was pretty tasty. I love Korean food and this new wave of cooks putting Bulgogi and Kalbi on a sub is right up my alley. I had the short rib (Kalbi) sub. The flavor was good and it has a little background heat which is good, I don't like being set on fire while working. My only real issue is that I felt like the meat was a bit overcooked. If the short rib was cooked to medium rare/medium, this might have been one of the best subs I ever had.
