This review regards the Ethiopian food truck. The beets are an interesting dish I haven't had before. They cut the injira, which isn't typical in Ethiopian food I've had previously. Generally, tasty, but feels a touch inauthentic.

Fojol Brothers (pronounced FO-GOAL Ok, it seems like they are pronouncing it as fojol, with a “J”) has 3 food trucks and 1 lassipop van. The truck names are Merlindia (indian cuisine), Benethiopia (ethiopian cuisine), Volathai (thai cuisine) and Rolling Silence which dispenses lassipops. Vegetarian and meat dishes are served basmati rice and there are lassipops for dessert. Fojol Bros. are nationally famous for their brightly decorated truck and even brighter costumes, complete with fake mustaches. Pro-tip: the Fojol Bros lay brightly-colored blankets on the grass near the truck for customers to grab a seat and enjoy their meal.
On November 3, 2010, Fojol Bros launched their 2nd food truck serving ethiopian cuisine called, Fojol Bros of Benethiopia. Fojol Bros also have a 3rd truck (really a van) called Rolling Silence which dispenses lassipops first seen on August 12, 2011. Volathai launched on Jan 3, 2012 serving Thai cuisine.
