I wanted so badly to give this truck 5 stars. The name What the Pho is clever but they really should switch to their strong point: the Bahn Mi. It was *STELLAR*. I stole as much as possible from my boyfriend, which was hard cus he eats a lot, but I managed a couple of bites. This sandwich is huge, sloppy, deliciousness from end to end. The meat is fabulous and the kimchi slaw... oh, the kimchi slaw. When your eyes roll back in your head every bite, you know you've hit gold. I will definitely be returning for this gem.
The pho, on the other hand, was disappointing. So the flavors are fantastic, and you're sipping the broth, and the meat is tasty, but then you go for a mouthful of noodle and... ick. Not my favorite moment, especially when everything else was so good. I think I would have been happier with just a container of broth, which really shines. But the noodles are too many and are missing something. They just don't pick up any flavor at all from the broth. If I had only tried the pho this would have been 2 stars.
Verdict - Get the Bahn Mi and bask in the glow. Skip the pho.

I just had the "Pho Wheels" truck 2 days ago and they were EXCELLENT!!! What the Pho? Eh ... The noodles are wider than average but okay, i usually season with plum sauce and sriracha and have an exact amount i use but couldn't seem to flavor it up the way i like it, chicken to noodle ratio was perfect and i like that they included bean sprouts, which Pho Wheels does not (but they are still hands down the best pho truck around). This pho was the "good enough" bowl - not great but good enough. would get it again though - but definitely nothing to write home about. The Summer Rolls were DEELISH! Perfect in every way and the peanut sauce was good too. Overall, not bad but not great either.

It is quite big, however, and extremely flavorful. I haven't had the pho here because I believe you have to have the experience of eating pho sitting down and relaxed, plus their portions for pho are small, but I love the bahn mi!

I wouldn't have minded a little more beef, but didn't find it as meager as some of the other reviewers. At $8.80 (including tax), I did find it dear, but decided today it was worth paying again!

What the Pho? launched in DC on June 28, 2012. The menu includes chicken & beef pho as well as pork bahn mi and lemongrass chicken bahn mi.
