Well, this is quite random, but Twitter user @Rizzz spotted a food truck being built in the alley of her office building. She went to talk to the worker and found out that it will be serving meatballs and is NOT associated with the Meatballs restaurant that recently opened in Penn Quarter.
Borinquen Lunch Box is very close to opening its window and serving their delicious Puerto Rican cuisine! The truck is complete (photos are shown below) and they are finishing up the inspection process. Look for them as early as the beginning of December.
A new Vietnamese food truck is just about to start serving in Arlington (~2 weeks), and then in DC (early 2012)! It is called Lemongrass Truck and more details on the menu and trucks photos can be found on their page!

I just received word that a new gourmet popcorn truck, named Popped! Republic, will be opening in DC in February 2012! The hot air-popped popcorn will come in a variety of flavors and seasonings. Check their page for more menu details, links and photos of the truck.
